Cycling Rice Cakes

Makes 20 squares of 170kcal, 22g carb, 1.2g protein, 8.4g fat

Ingredients

  • 500g short-grain rice
  • 1l water
  • 200g creamed coconut (block)
  • 30g sugar
  • 1 tsp vanilla extract
  • optional: 1tsp cinnamon

Method

  • place all ingredients into a rice cooker and cook.
  • when cooked, mix everything together.
  • place into a ziplock freezer bag. seal and squash flat to about 4cm. smooth air out.
  • once cool, refrigerate overnight
  • slice bag open, and cut into ~20 squares
