Cycling Rice Cakes

Ingredients
- 500g short-grain rice
- 1l water
- 200g creamed coconut (block)
- 30g sugar
- 1 tsp vanilla extract
- optional: 1tsp cinnamon
Method
- place all ingredients into a rice cooker and cook.
- when cooked, mix everything together.
- place into a ziplock freezer bag. seal and squash flat to about 4cm. smooth air out.
- once cool, refrigerate overnight
- slice bag open, and cut into ~20 squares
